JUHEE was founded on a simple belief: that the finest flavours come from patience, heritage, and ingredients that have stood the test of time.

Our story begins with a treasured family recipe brought from Korea to the UK over twenty years ago — inspired by the traditions of Korean fermentation and the quiet wisdom of nature.

At the heart of everything we create is Korean maesil, the green plum that has been valued for centuries. Its qualities were recorded as early as 1613 in the Dongui Bogam, the renowned Korean medical text recognised by UNESCO. Often described as a royal digestive aid, fermented maesil was traditionally enjoyed after grand meals to restore balance and harmony to the body.

This remarkable fruit has long been treasured in Korea not only for its vibrant sweet-tart flavour, but also for its natural organic acids known to support digestion and gut health.

At JUHEE, we honour this heritage by using fermented maesil as the foundation of our recipes — bringing a refined, natural sweetness without refined sugar.
